Balsamic Steak with Charred Corn Salad

Ingredients

  • 1 lb sirloin

  • 1 cup cherry tomatoes

  • 1/2 red onion (thinly sliced)

  • 4oz blue cheese

  • 1 bag salad mix

  • 2 ears of corn

  • 5 TBSP balsamic vinegar (split)

  • 2 TBSP each of fresh basil and parsley

  • 1 lemon, zested

  • 1 clove garlic

 

Directions

  1. Marinate meat in salt, pepper, and 2.5 TBSP balsamic vingegar for a minimum of 30 mins.

  2. While the meat is marinating, set oven on high broil. Coat corn with oil, salt, and pepper; place on sheet tray and roast until lightly charred.

  3. Finely chop the herbs, zest lemon, mince garlic, and mix.

  4. Halve cherry tomatoes, slice the onion, roughly chop salad greens, and crumble the blue cheese, then set aside.

  5. Let the corn cool, then cut off the cob.

  6. Heat cast iron to med-high, add steak to the pan and cook for 4-5 minutes on both sides.

  7. Let steak rest 5 min and slice thin.

  8. Toss everything together with 2.5 TBSP balsamic and top with steak.
