Homemade Granola

 

Ingredients

  • 4 cups oats

  • 1/2 cup pumpkin seeds

  • 1 TBS chia seeds

  • 1/4 cup coconut flakes

  • 1/2 ts cinnamon

  • 1/2 cup maple syrup

  • 1 tsp salt

  • 1 tsp vanilla

  • 1 cup dried cranberries

  • 1 cup chopped nuts

  • 1/2 cup melted coconut oil

 

Directions

  1. Preheat the oven to 350 degrees.

  2. Mix together all of the dry ingredients in a bowl and set aside.

  3. Add the coconut oil to a measuring cup and heat in the microwave until melted. 

  4. Stir in salt, cinnamon and vanilla, mixing until dissolved. Next, add in the maple syrup.

  5. Combine wet and dry ingredients.

  6. Spread the mixture on a baking sheet and press down firmly with a spoon to distribute the granola evenly.

  7. Bake for 12 minutes; Remove from the oven and stir/re-press the mixture.

  8. Bake for an additional 12 minutes, then remove from the oven and let rest for 45 minutes or until cool. Store in an airtight container and enjoy!
