Melon and Cucumber Salad with Herby Vinaigrette
Ingredients
2 cups chopped cantaloupe
2 cups chopped English cucumber
4 oz crumbled feta cheese
1/4 cup chopped, roasted and salted pistachios
1/4 cup chopped fresh basil
4 tablespoons of chopped fresh mint
Salt and pepper
For the vinaigrette:
1/2 cup tightly packed basil leaves
1/2 cup tightly packed mint leaves
2 garlic cloves, minced
3 tablespoons lemon juice
2 tablespoons of apple cider vinegar
Big pinch of salt and pepper
1/2 cup of olive oil
Directions
First, make the dressing: combine all ingredients into a food processor or blender and blend until smooth.
Combine the cantaloupe and cucumber in a large bowl. Top with the feta, pistachios, and herbs. Add a pinch of salt and pepper.
Toss well until everything is combined. Drizzle on a few tablespoons of the vinaigrette. Toss a few more times.
Taste and adjust seasoning as desired - more salt if needed and as much dressing as you wish. Serve immediately with extra dressing!
