Melon and Cucumber Salad with Herby Vinaigrette

Ingredients

  • 2 cups chopped cantaloupe

  • 2 cups chopped English cucumber

  • 4 oz crumbled feta cheese

  • 1/4 cup chopped, roasted and salted pistachios

  • 1/4 cup chopped fresh basil

  • 4 tablespoons of chopped fresh mint

  • Salt and pepper

For the vinaigrette:

  • 1/2 cup tightly packed basil leaves

  • 1/2 cup tightly packed mint leaves

  • 2 garlic cloves, minced

  • 3 tablespoons lemon juice

  • 2 tablespoons of apple cider vinegar

  • Big pinch of salt and pepper

  • 1/2 cup of olive oil

 

Directions

  1. First, make the dressing: combine all ingredients into a food processor or blender and blend until smooth.

  2. Combine the cantaloupe and cucumber in a large bowl. Top with the feta, pistachios, and herbs. Add a pinch of salt and pepper.

  3. Toss well until everything is combined. Drizzle on a few tablespoons of the vinaigrette. Toss a few more times.

  4. Taste and adjust seasoning as desired - more salt if needed and as much dressing as you wish. Serve immediately with extra dressing!
